Ingredients :
- 3 c cooked Quinoa (1c dry)
- 3/4 c dried Fruit - we used a mix of Raisins, Golden Raisins, chopped dried Apricots and dried Currants
- 1/4 c Pine Nuts, toasted
- 1/4 c Cilantro, chopped
- 1 Bell Pepper of any color, diced
- 1/4 c Lime Juice
- 1/4 c EVOO
- 1 tsp Dijon Mustard
- 2 Garlic Cloves, minced
- Salt
Method :
- Rinse quinoa under cold water and cook as directed, as needed. Cool
- Toast the pine nuts in the oven, as needed.
- Mix the cooked (and cooled) quinoa, dried fruit, toasted pine nuts, cilantro, and diced bell pepper together in a large bowl.
- In a separate, smaller bowl whisk together the lime juice, olive oil, Dijon mustard, minced garlic cloves, and salt to taste for the dressing.
