
Ingredients :
- 1 15.5 oz. can of navy beans (or cannelini beans)
- 2 15oz cams of diced tomatoes
- 2 clove garlic minced
- 1 large diced yellow onion
- 3 cup chicken broth or vegetable broth
- 1/2 tbsp olive oil
- 1/4 tsp crushed red pepper flakes (optional)
- 1/2 tsp oregano
- 1/2 tsp dried rosemary
- 1 tsp salt (or Salt to taste)
- 1/2 tsp pepper
- 1 garnish with drizzled olive oil and sour cream if desired
Method :
- Sautee onions in olive oil until translucent. Add garlic and Sautee for about 30 seconds.
- Add beans and camned tomatoes . Then add your rosemary, oregano, salt, pepper, chili flakes if desired.
- Stir ingredients and cover half way with lid. Cook for 20 to 30 minutes on medium low.
- When finished blend with handheld hand mixer until smooth and creamy. You can also blend in stand up blender in batches. Drizzle with olive oil and garnish with a dollop of sour cream if desired! Enjoy!
