Recipe Christmas plum cake

Ingredients :

  • 200 g butter/margine
  • 25 g black rasins
  • 4 eggs (separate egg white and yolk)
  • 200 g castor sugar/powder sugar
  • 10 g baking powder
  • 25 g almonds
  • 7 g spice powder (nutmeg, cardamon, cloves, cinnamon)
  • 200 g all purpose flour/maida
  • 25 g tutti frutti
  • 3 tbsp caramel syrup
  • 5 drops pineapple essence
  • 1 tbsp milk powder
  • 1 pinch salt
  • 25 g chopped dates
  • 3 drops vanila essence
  • 25 g cashew nuts
  • 25 g cocoa powder
  • 50 ml rum/fruit juice like apple, orange or grape

Method :
  1. First you can sperate egg white and egg yolk
  2. Mix the flour with salt, baking powder, milk powder, spice powder, cocoa powder
  3. Soak the cashew nuts, almonds, dates, tutti frutti, black raisins in rum at least 1 day. After soak mix with 2 tbsp flour. Ensure that all are well coated
  4. First beat the egg white 3 mins in a electric beater (tips: if start beating, always use low speed to high speed)
  5. Take a big bowl add butter beat very well at least 5 mins in a electric kettle
  6. After that add vanila essence, pineapple essence, egg yolk, add caremel syrup, beat 2 to 3 mins
  7. Add castor sugar beat well for 5 mins
  8. Add the flour mix and take a spoon, fold very well
  9. Add the soaked fruits fold very well (tip: don"t beat after adding flour)
  10. Take a cake baking pan, lay butter paper inside the tray or grease some any fat like oil, ghee, butter ,margine and dust with some flour
  11. Pre heat oven 180°C for 10 mins
  12. Bake the cake for 45 to 50 mins at 180°C
