Ingredients :
- 1 tbsp active dry yeast
- 2 tbsp sugar
- 2 tbsp brown sugar
- 2 1/2 teaspoons salt for dough
- 1 tbsp sea salt for top
- 4 cups flour
- 1 tbsp baking soda
- 1 large egg with tbsp water for egg wash
- 2 tbsp shredded cheddar
- 1/4 cup Caraway seeds
Method :
- Combine yeast, sugars, and 1 cup and 2 tbsp warm water. Let sit until foamy, about 5 minutes
- Add 2 1/2 tsp salt and the flour and mix until dough forms
- Cover dough and leave overnight at room temperature to rise
- On a floured surface divide into 12 pieces. Roll each into an 8 inch log then shape into a pretzel.
- Place pretzels on a baking sheet and let sit in a warm place to rise for 45 min
- Preheat the oven to 400
- Combine 4 cups water and the baking soda and bring to a boil. Drop pretzels in for 20 seconds then put them on a baking sheet
- Brush the pretzels with the egg wash sprinkle with cheese, Caraway seeds, and sea salt.
- Bake until golden brown, about 20 min
