
Ingredients :
- 6 tbsp oil
- 1/2 cup finely chopped onion
- 1 inch piece of cinnamon stick
- 2 cloves
- 480 ml hot water
- 1/2 tsp saffron threads
- 1 cup long grain rice
- 2 tbsp brown sugar
- 1 tsp low-sodium salt
- 1 pinch ground coriander
- 1 pinch ground cardamom
Method :
- Heat the oil in a pan and add the onion, cinnamon stick and cloves, cooking gently until the onion has softened
- Meanwhile add the saffron to the hot water and let stand
- Rinse the rice well then add to the onion pan, stirring while cooking on a medium heat now for 5 minutes or until the rice starts to turn golden
- Stir in the water, sugar, salt, coriander and cardamom, bring to the boil then turn down to a simmer
- Put the lid on the pan and let simmer for 30 minutes or until all the water has been absorbed. The rice will look "crater-like" on top, or "holey" when done. Just fluff it with a fork and remove the cinnamon stick and cloves before serving
