Recipe Vickys Sweet Saffron Rice

Resep Vickys Sweet Saffron Rice

Ingredients :

  • 6 tbsp oil
  • 1/2 cup finely chopped onion
  • 1 inch piece of cinnamon stick
  • 2 cloves
  • 480 ml hot water
  • 1/2 tsp saffron threads
  • 1 cup long grain rice
  • 2 tbsp brown sugar
  • 1 tsp low-sodium salt
  • 1 pinch ground coriander
  • 1 pinch ground cardamom

Method :
  1. Heat the oil in a pan and add the onion, cinnamon stick and cloves, cooking gently until the onion has softened
  2. Meanwhile add the saffron to the hot water and let stand
  3. Rinse the rice well then add to the onion pan, stirring while cooking on a medium heat now for 5 minutes or until the rice starts to turn golden
  4. Stir in the water, sugar, salt, coriander and cardamom, bring to the boil then turn down to a simmer
  5. Put the lid on the pan and let simmer for 30 minutes or until all the water has been absorbed. The rice will look "crater-like" on top, or "holey" when done. Just fluff it with a fork and remove the cinnamon stick and cloves before serving
