
Ingredients :
- 1 T coconut oil
- 2 cloves garlic, minced
- 4-5 scallions, chopped
- 1 lb boneless pork or ham, cubed or thinly sliced
- 1 T fresh ginger, grated
- 1 large head broccoli, cut into florets
- 4 oz mushrooms, sliced
- 1/2 c coconut milk
- 1 tsp curry
- 1/2 c fish sauce
Method :
- In large skillet, heat oil. Cook garlic and scallions. Add meat and ginger. Cook, stirring occasionally until meat is no loner pink.
- Add broccoli, mushrooms, coconut milk, curry and fish sauce. Cover and cook until broccoli is tender.
- Serve with 1 cup cooked riced cauliflower.
