Ingredients :
- 1 onion, coarsely chopped
- 3 garlic cloves, chopped
- 1 tomato, chopped
- 4 Tbsp basil
- 1 orange or yellow pepper, chopped
- 4 cups kale or collard greens (can use frozen or chop up fresh)
- 3 eggs
- 1 cup rice flour (if desired)
- 3 lbs ground beef or ground turkey (I use a mixture of both)
- 1 lb bacon or turkey bacon
Method :
- Sautee the onion and garlic for 5 minutes in the oil of your choosing. Add the bell pepper and sautee for 5 more minutes. Add the kale or collard greens and sautee for 1 more minute.
- While that"s cooking, chop up the bacon or turkey bacon and sautee for 5 minutes.
- Place all the other ingredients into a bowl, then add the vegetables that you just cooked. Mix them together, put them into 2-3 9x11" baking pans.
- Bake at 375 degrees for 30-40 minutes, until cooked through the center and a little crispy on the outside.
