Ingredients :
- 400 g Frozen Fish (Cod, Haddock, i'm using Basa)
- 2 Tbsp Olive Oil
- 1/2 head Crispy Lettuce
- 4 Tomatoes
- 1/4 Cucumber
- 1/2 Red Onion
- 1 handful sweet corn
- 1/4 sweet peppers, two colours
- 1 Tbsp Lemon Juice
- 2 Tbsp Sour Cream
- 1 Tbsp oyster sauce
- 1 Tbsp Dried Onions
- 1/4 cup grated cheese for garnish
- Virgin olive oil for garnish drizzling on top
Method :
- Cut the fish into large pieces, place fish in a roasting dish greased with olive oil. Dribble more olive oil over the fish. put in a preheated oven for 20 minutes on 175°C or gas 6
- While fish is cooking, make your crispy salad. Cut up lettuce into bite size pieces and add to a large bowl.
- Then cut up the red onions into small pieces and add to bowl
- Cut tomatoes into wedge pieces and add to bowl
- Cut up cucumber slices thick and then into small pieces and add to bowl
- Add the handful of corn into the bowl
- Cut up sweet peppers and add to the salad bowl
- Toss the salad add salt & pepper, 1 tablespoon of lemon juice and toss
- Then add the sour cream and toss gently again
- Add 1 tbsp of oyster cauce and mix in.
- Now the fish should be cooked. Add to the salad and toss once more, then add the dried onions all over the top
- Serve on a bed of crispy lettuce
- Add the mixture on top of the lettuce
- Then garnish grated cheese
- Drizzle with virgin oil
