Ingredients :
- 1 Red pepper
- 1 Medium red onion
- 2 Chicken breasts
- 1 Tsp Smoked Paprika
- 1 small pinch ground cumin
- 2 Limes
- Black pepper
- 2 Pitas
- Fat-free natural yogurt to replace creme fraiche
- 50 g Grated mozzarella cheese
- 1/2 chili pepper
- 15 Cherry tomatoes
- Fresh coriander
- Sea salt
- Black pepper
- 1 Lime
- Olive oil
- 1 Handful Cherry tomatoes
- Half a chili
- Fresh coriander
- 1 Ripe avocado
- 1 Lime
Method :
- Cut pepper into thin strips and slice the onion. Slice your chicken lengthways into long strips. Put the peppers, onion, and chicken into a bowl with the paprika and cumin. Squeeze over the juice of half a lime, add olive oil, season with black pepper and mix. Marinate for 5 minutes while making the salsa.
- Finely chop chilli. Roughly chop your tomatoes and the coriander. Put the chilli and tomatoes into a bowl with salt and black pepper and the juice of 1 lime, then stir in your chopped coriander.
- Start frying the pepper, onion and chicken mix and keep turning.
- For guacamole, squeeze a handful of cherry tomatoes onto a board. Finely chop ½ red chilli and some coriander leaves. Crush avocado. Adjust flavours if needed.
- Warm your pitas in the toaster.
- Once everything is done, pile the fajitas with the sauces, and add some grated mozzarella cheese on top.
