
Ingredients :
- 200 g red lentils
- 4 large carrots - sliced
- 1 large onion
- 1 clove garlic
- 1 can tomatoes
- 1 teaspoon dried parsley
- Salt & pepper
- Olive oil
Method :
- Rinse lentils then boil for 10 minutes
- Brown onion and garlic in olive oil in a frying pan then add carrots
- Mix lentils, onion, carrots and add can of tomatoes
- Cook over low to medium heat for 15 minutes and stir occasionally
- Add salt and pepper and serve with rice
