Ingredients :
- 6 eggs
- 2 cups mixed oriental vegetables (canned)
- sauce
- 1/2 c chicken broth
- 1 tsp rice vinegar
- 1 tsp cornstarch
- 1 tsp sugar
- 2 tbs soy sauce
Method :
- Heat broth, vinegar, sugar and soy sauce in a saucepan
- Mix cornstarch with 1 tsp cold water
- Whisk cornstarch mix into saucepan mix
- Simmer sauce for 5 minutes and set aside
- Heat oil in a heavy skillet.
- Whip eggs till fluffy
- Drain vegetables well and add to eggs
- Spoon egg mixture into skillet to form small patty
- Turn patty over to brown each side evenly
- Serve warm, drizzling warm sauce overtop
