Recipe Vegetable Egg Foo Young

Ingredients :

  • 6 eggs
  • 2 cups mixed oriental vegetables (canned)
  • sauce
  • 1/2 c chicken broth
  • 1 tsp rice vinegar
  • 1 tsp cornstarch
  • 1 tsp sugar
  • 2 tbs soy sauce

Method :
  1. Heat broth, vinegar, sugar and soy sauce in a saucepan
  2. Mix cornstarch with 1 tsp cold water
  3. Whisk cornstarch mix into saucepan mix
  4. Simmer sauce for 5 minutes and set aside
  5. Heat oil in a heavy skillet.
  6. Whip eggs till fluffy
  7. Drain vegetables well and add to eggs
  8. Spoon egg mixture into skillet to form small patty
  9. Turn patty over to brown each side evenly
  10. Serve warm, drizzling warm sauce overtop
