Resep Eggplant parmesan II

Ingredients :

  • ◆◆◆◆◆◆◆ Eggplant ◆◆◆◆◆◆◆◆
  • 1 large eggplant
  • 1/2 teaspoon salt
  • ◆◆◆◆◆◆◆◆◆◆◆◆ Sauce ◆◆◆◆◆◆◆◆◆◆
  • 1/4 cup chopped parsley
  • 28 ounces tomato sauce
  • 1/2 teaspoon basil
  • 1/2 teaspoon whole leaf oregano
  • 1/2 teaspoon salt
  • 1/3 cup sugar
  • 1 teaspoon granulated garlic powder
  • 1/2 teaspoon ground black pepper
  • 2/3 cup parmesan cheese
  • ◆◆◆◆◆◆◆◆◆◆◆ Topping ◆◆◆◆◆◆◆◆◆◆◆
  • 1 cup mozzarella cheese, shredded, more if you like
  • 2/3 cup parmesan cheese grated
  • ◆◆◆◆◆◆◆ Frying oil ◆◆◆◆◆◆◆◆◆◆
  • as needed extra virgin olive oil

Method :
  1. Preheat oven 400° Fahrenheit
  2. Peel and thinly slice the eggplant
  3. Fry in the oil in batches till done
  4. Move to a paper towel to absorb excessive oil, season each piece with salt. Line the bottom of a baking pan
  5. Cook the sauce add tomato sauce, garlic, basil, parsley, oregano, sugar, parmesan cheese, salt and pepper. Simmer 15 minutes stirring occasionally.
  6. Pour the sauce over the eggplant. Add cheese toppings bake 20-25 minutes
  7. Let sit 5 minutes. Serve hope you enjoy!
