
Ingredients :
- 1 tbsp plus 1 tsp of bacon fat (or olive oil)
- 5 Or 6 medium potatoes, small to medium dices
- 1 Bell pepper, diced large
- 4 garlic cloves, roughly chopped
- 1 1/3 cup mushrooms, sliced thick
- bunch parsley, chopped (for garnish)
- 1 onion, chopped
- salt and pepper
- 1 1/4 tsp dried basil
Method :
- Heat bacon fat (or oil) in cast iron skillet. Add your onion and garlic, sautee until translucent.
- Add your mushrooms, cook for 3 min.
- Add your potatoes, and cook for 5 min on medium-high. Season with salt and pepper and basil.
- Turn the heat down to medium-low, add your diced peppers and let cook on medium-low for about 30 min.
- Stir occasionally until potatoes are cooked through and mushrooms are deep brown.
- Add chopped parsley and serve.
