Ingredients :
- 110 g Butter- Room Temperature
- 130 g Caster Sugar
- 2 Large Eggs
- 240 g Self Raising Flour
- 1 tsp Vanilla Extract
- 1 tsp Baking Soda
- 3 Large Ripe Bananas + 1 for Decoration
- 1 1/2 tsp Cinnamon
- 1/2 tsp Ginger (optional)
Method :
- Preheat your oven to 180 C degrees and grease a loaf pan ready for the batter.
- Cream together the butter, sugar and vanilla in a medium bowl.
- Add in the eggs and mix until just combined.
- In a separate bowl, mix the flour, baking soda, cinnamon and ginger and sift gradually over the butter mixture, folding with a spatula as you go along.
- In a small bowl, mash the bananas and add to the batter and gently fold.
- Note: At this point if you wish you could add in some chopped nuts or even some raisins.
- Pour the batter into the well greased loaf pan.
- Place in the oven for approximately 50 mins, or until a toothpick inserted and comes out clean.
- If your really need to, you can cover the top with tin foil after 25 mins, to prevent it from browning too much. But that depends on your oven.
- When it"s ready, take out into a cooling rack and wait for it to cool completely before serving.
- Serve with a scoop of ice cream, or just on its own with a cup of your favourite hot drink. Enjoy!!!! :)
