Ingredients :
- 2 Tablespoon Olive Oil
- 1 teaspoon cumin seeds
- 1 Large Onion sliced
- 2 Tablespoon Ginger, Garlic and Turmeric Paste
- 2 Tablespoon vegetable masala (Pau Bhaji Masala)
- 4 Green Chilis sliced
- 1 Medium Potato, peeled and boiled
- 1 Large Carrot, sliced thin and blanched in salt water
- 2 Zucchini, sliced
- 1 cup String Beans, blanched in salt water
- 1 can Mushrooms, optional
- 2 Fresh Tomatoes
- 4 cloves Fresh Garlic, sliced
Method :
- Heat Oil in a large pan. Add cumin seeds. Cook 1 minute. Add onions and cook 3 minutes. Add vegetable masala and cook 1 minute.
- Add everything (except potatoes) in pan and add 2 tablespoon water. Mix and cook 2 minutes. Reduce heat and for 10 minutes covered.
- Add Potatoes and cook for 5 more minutes. Check for salt and serve.
