Ingredients :
- 2 1/2 c flour
- 1 1/2 c sugar
- 1 tsp baking soda
- 1 tsp salt
- 1 Tbsp cocoa
- 1 1/2 c oil
- 1 c buttermilk
- 2 eggs
- 2 T red coloring
- 1 t vanilla
- 1 tsp vinegar
- 1 lb cream cheese
- 4 c powdered sugar
- 1 c butter
- 1 tsp vanilla
Method :
- Sift dry ingredients together in mixer bowl.
- Whisk wet (through vinegar) ingredients together in bowl. Mix well.
- Slowly add wet ingredients to dry, mixing well
- Pour into 3 9" pans. Bake at 350 for 30 minutes.
- Icing
- Cream butter and cream cheese until smoooth and well blended.
- Add vanilla and mix well
- Add powdered sugar a little at a time mixing well.
- Assembly
- Put one cooled cake layer on plate. Top with 1/2 c icing, spreading within 1/2" of edges. Repeat with other layers.
- Finish by icing the sides. Cover and chill until ready to serve.
