Ingredients :
- 3 lbs boneless skinless chicken breasts, or tenders
- 2 packs taco seasoning
- 1/2 cup extra virgin olive oil
- Taco shells
- Toppings:
- Fresh grilled jalapeños
- diced tomatoes
- guacamole
- cheese
Method :
- Preheat grill to as hot as possible
- Mix taco seasoning and evoo. Pour mixture over chicken, be sure to coat all pieces thoroughly.
- Grill chicken 2 minutes each side. (Gives beautiful grill marks,and seals in the juices)
- Lower temp to medium. Cook chicken until cooked to proper temp. (About 8- 10 minutes each side).
- Cut cooked chicken into 1/2 inch pieces.
- We serve family style, each person making their own tacos. I like to garnish with fresh grilled jalapeños, diced tomatoes, guacamole, and cheese. Serves my family of 6 big eaters, with leftovers.
