Ingredients :
- 2 pork chops, boneless (approximately " thick)
- 2 eggs beaten
- 1/4 c freshly grated Parmesan cheese
- 2 tbsp olive oil
Method :
- Preheat oven to 375 degrees F.
- Dip the pork I chops in the beaten eggs, and then in the Parmesan cheese, coating both sides equally. Set aside on a platter.
- Add the olive oil to a skillet set over medium-high heat. When the oil is hot, but not smoking, add the chops to the pan and lower the heat to medium. Set a timer and cook the chops for 4 minutes per side (until golden brown), turning only once. Do NOT move the chops around the pan.
- Transfer the chops to an oven-proof dish and finish in the oven for 5 minutes, or until desired oneness. Remove fro oven and allow to sit for 3 minutes before serving.
- NOTE: Bone-in chops will require another minute per side in the skillet, and a couple of minutes longer in the oven. 631 calories per serving, GL=0, Glycal=0
