Ingredients :
- 1 gallon fresh good quality water (if your tap water is not drinkable don't use it.)
- 1 Cup Kosher Salt
- 20 whole Pepper Corns
- 2 fresh Bay Leafs
- 1/4 Cup Honey
- 10 whole sightly bruised Sage Leafs
- 1 heavy pinch of Red Pepper Flake
- 2 large pieces of Lemon Peel
Method :
- Dissolve the salt and honey in the water.
- Add everything else.
- I brine my Chicken for 2 hours bone in, or 1 1/2 hours boneless.
