Ingredients :
- 250 g extra large tiger prawns
- 1 tablespoon Oriental/Asian fish sauce
- 2 tablespoons lime juice
- 1/2 teaspoon soft brown sugar
- 1 small fresh red chilli finely chopped
- 1 spring onion finely chopped
- 1 small garlic clove crushed
- 1 inch piece fresh lemongrass finely chopped
- 2 tablespoons chopped fresh coriander
- 3 tablespoons dry white wine
- 8 lettuce leaves to serve
- Fresh coriander's sprigs to garnish
Method :
- Peel and devain the shrimp
- Boil until pink.
- Place the tiger prawns into a bowl and add all the remaining ingredients.
- Stir well, cover and leave to marinate in the fridge for at least 2 hours, mixing and turning the prawns occasionally
- Arrange 2 or 3 of the lettuce leaves on each of 4 individual serving plates
- Spoon the prawn salad onto the letters leaves. Garnish with fresh coriander and serve at once
