Recipe Thai style Prawn Palad

Ingredients :

  • 250 g extra large tiger prawns
  • 1 tablespoon Oriental/Asian fish sauce
  • 2 tablespoons lime juice
  • 1/2 teaspoon soft brown sugar
  • 1 small fresh red chilli finely chopped
  • 1 spring onion finely chopped
  • 1 small garlic clove crushed
  • 1 inch piece fresh lemongrass finely chopped
  • 2 tablespoons chopped fresh coriander
  • 3 tablespoons dry white wine
  • 8 lettuce leaves to serve
  • Fresh coriander's sprigs to garnish

Method :
  1. Peel and devain the shrimp
  2. Boil until pink.
  3. Place the tiger prawns into a bowl and add all the remaining ingredients.
  4. Stir well, cover and leave to marinate in the fridge for at least 2 hours, mixing and turning the prawns occasionally
  5. Arrange 2 or 3 of the lettuce leaves on each of 4 individual serving plates
  6. Spoon the prawn salad onto the letters leaves. Garnish with fresh coriander and serve at once
