Recipe Pork and Apple Stir Fry

Ingredients :

  • 2 box Rice-a-Roni rice pilaf
  • 2 1/3 cup Apple juice
  • 1 tsp Paprika
  • 1/2 tsp Ground thyme
  • 1/2 tsp Seasoned salt
  • 2 tbsp Butter
  • 2 medium apples, cored and sliced
  • 1 tsp Cornstarch
  • 1 lb Boneless pork loin, pork tenderloin, or boneless ribs. I prefer ribs for less cutting.

Method :
  1. Prepare Rice-a-Roni per package directions, substituting half of the water for apple juice.
  2. While rice is simmering, cut pork into 1/4 inch strips. Combine seasonings and toss with meat. A gallon ziplock bag works great for this.
  3. In large skillet, melt margarine over medium heat. Stir fry meat 3-4 minutes or just until pork is no longer pink.
  4. Add apples, and stir fry 2-3 minutes more until apples are almost tender. Add combined 1/3 cup apple juice and cornstarch. Stir 1-2 minutes or until thickened to form glaze.
  5. Serve pork over rice. Add rice noodles or walnuts for an extra crunch.
