Ingredients :
- 2 box Rice-a-Roni rice pilaf
- 2 1/3 cup Apple juice
- 1 tsp Paprika
- 1/2 tsp Ground thyme
- 1/2 tsp Seasoned salt
- 2 tbsp Butter
- 2 medium apples, cored and sliced
- 1 tsp Cornstarch
- 1 lb Boneless pork loin, pork tenderloin, or boneless ribs. I prefer ribs for less cutting.
Method :
- Prepare Rice-a-Roni per package directions, substituting half of the water for apple juice.
- While rice is simmering, cut pork into 1/4 inch strips. Combine seasonings and toss with meat. A gallon ziplock bag works great for this.
- In large skillet, melt margarine over medium heat. Stir fry meat 3-4 minutes or just until pork is no longer pink.
- Add apples, and stir fry 2-3 minutes more until apples are almost tender. Add combined 1/3 cup apple juice and cornstarch. Stir 1-2 minutes or until thickened to form glaze.
- Serve pork over rice. Add rice noodles or walnuts for an extra crunch.
