Ingredients :
- 1 C cannelini beans
- 3 carrots; 1/8" slices
- 1 T fresh dill; minced
- 2 t honey
- 1 t turmeric
- 1 t brown sugar
- 1/2 t fresh thyme; minced
- 1/2 lemon; juiced
- 1 pinch kosher salt and black pepper
- 1 T butter
- 1 T olive oil
Method :
- Heat butter and oil over medium heat in a medium size saute pan. Add carrots and thyme. Caramelize slowly. When carrots are nearly caramelized, add brown sugar and toss.
- Add beans, turmeric, salt, and pepper. Toss. Cook for 1 minute.
- Add dill, honey, and lemon juice. Toss. Serve.
