Ingredients :
- Shortbread:
- 3 cups all purpose flour
- 1 1/2 cups powdered sugar
- 3 sticks melted butter
- Lemon mixture:
- 6 whole eggs
- 3 cups white sugar
- 1 1/2 teaspoons baking powder
- 1/2 cup flour
- 1/2 cup fresh lemon juice
- Outer yellow zest of 2 or 3 lemons
Method :
- Preheat oven to 350°F
- Mix flour and powdered sugar together. Pour melted butter over dry ingredients mix gently until crumbly. Lightly spray 9x13 casserole dish with non sticking spray. Gently press the crumbs into pan evenish layer bake for 15 min
- Whisk the eggs in a bowl until uniform and light. Add sugar baking powder and flour stir to combine them well. With a small grater, zest the outer yellow parts of 2 lemons (about 2 Tablespoons). Add to mixture, squeeze the lemons straining out pips and pulps (about 1/3 cup) and add to mixture
- After 15 minutes pull crust from oven and immediately pour curd mixture over crust. Bake for another 45 minutes or until set... It shouldn"t jiggle in middle
- Cool completely, don"t rush the cooling prices will be messy. When completely cooled dust with powdered sugar
