Ingredients :
- 500 g brinjal
- 250 g tomatoes
- 4-5 green chillies
- leaves fresh coriander
- 1/2 tbsp ginger-garlic paste
- 3 tbsp cooking oil
- to taste salt and sugar
- Lime juice
Method :
- Wash the brinjals and cut into small pieces.
- Heat the oil in a deep based frying pan. Put the pieces of brinjals in and lightly fry them for a minute.
- Add chopped tomatoes, chillies and coriander leaves and ginger garlic paste to the brinjals.
- Stir fry till the brinjals and tomatoes soften. Add little bit of water and allow it to dry up.
- Add salt and sugar and cook on a low flame for a minute or two.
- Remove from flame and serve sprinkling lime juice over.
