Ingredients :
- 1 cup Jasmine Rice
- 1 3/4 cup Water
- 1/2 stalk Lemongrass
- 1 cup Coconut milk
- 1 tbsp Cilantro, fresh, julienne
- 1 Lime
- to taste Fine sea salt and freshly ground white pepper
Method :
- Place rice and water in saucepan.
- Cut stalk of lemongrass in half. Bruise the "meaty" bit with back of chef knife ir other blunt instrument. Add to pot with rice.
- Bring pot of rice to boil, reduce heat. Simmer 10 minutes.
- Remove from heat. Cover tightly and DO NOT uncover for an additional 10 minutes.
- Uncover rice. Remove lemongrass and discard.
- Add coconut milk and cilantro. Stir well.
- Add lime juice, sea salt and white pepper to taste.
