Recipe Coconut Lemongrass Rice

Ingredients :

  • 1 cup Jasmine Rice
  • 1 3/4 cup Water
  • 1/2 stalk Lemongrass
  • 1 cup Coconut milk
  • 1 tbsp Cilantro, fresh, julienne
  • 1 Lime
  • to taste Fine sea salt and freshly ground white pepper

Method :
  1. Place rice and water in saucepan.
  2. Cut stalk of lemongrass in half. Bruise the "meaty" bit with back of chef knife ir other blunt instrument. Add to pot with rice.
  3. Bring pot of rice to boil, reduce heat. Simmer 10 minutes.
  4. Remove from heat. Cover tightly and DO NOT uncover for an additional 10 minutes.
  5. Uncover rice. Remove lemongrass and discard.
  6. Add coconut milk and cilantro. Stir well.
  7. Add lime juice, sea salt and white pepper to taste.
