Ingredients :
- 300 grams Chicken breast
- 400 grams Canned tomatoes
- 1/2 large onion
- 2 clove garlic
- 1 tbsp Dried basil
- 1 tsp Salt
- 1 tsp Pepper
- 100 grams Spaghetti
- 1 tsp Olive oil
Method :
- Get your ingredients together, dice the onion, roughly chop the garlic and cut the chicken into bite-sized pieces.
- Heat the olive oil in a pan and cook the onion and garlic on a medium-high heat until the onion becomes translucent.
- Next, add the tomatoes, 1/2 tsp salt and 1/2 tsp pepper. If you use whole tomatoes like I did here, gently break them down with a wooden spoon. Sprinkle in the basil, then lower the heat to medium and let this simmer for a few minutes.
- While the sauce is simmering, lightly brown the chicken in another pan.
- After a few minutes when the chicken is browned, add it to the sauce and mix well. Leave this to simmer for about 5 minutes. Lower the heat if things bubble too much
- Now add your pasta to a pan of boiling water along with 1/2 tsp salt. This should be on a higher heat - you want a rolling boil for pasta.
- When the pasta is cooked, around 7 minutes, drain it well, plate and spoon a generous helping of the chicken tomato mix on top. A quick topping of fresh ground pepper and serve!
