Ingredients :
- 8 medium over ripened bananas, well-spotted skins
- 150 g strawberries
- 3 tbsp cocoa powder
- 1 tbsp vanilla extract
- to taste icing sugar
- coconut cream as required
Method :
- Chop the bananas into chunks and freeze in batches of 3 bananas, 3 bananas and 2 bananas. Freeze the strawberries too
- Once rock solid, take one of your batches of 3 bananas and add to a food processor with the vanilla
- Puree smooth, taste and sweeten with a little sugar and coconut cream if required then spoon into the first third of a large dish
- Now add your batch of 2 bananas and the whole of the strawberries to the food processor and puree them smooth
- Sweeten if required etc and spoon into the dish beside the vanilla
- Finally add your remaining bananas and the cocoa and puree smooth
- Again sweeten and add a dash of coconut cream if required and spoon into the last third of your dish then put back into the freezer for 20 minutes only
- Serve imediately and don"t return to the freezer or it"ll become rock hard
