Ingredients :
- pastry dough for currant rolls
- 2 cup flour
- 1/2 cup cold cubed shortening
- 3/4 cup cold cubed butter
- 1 tbsp vinegar or lime or lemon juice
- 1/2 cup very cold water...may use more or less
- 1 egg beaten
- currant filling
- 2 tbsp melted butter
- 2 cup good quality currants washed and dried
- 2 tsp ground cinnamon
- 1/4 cup sugar
Method :
- in a bowl or food processor combine shortening butter flour lime juice mix adding little water at a time until dough comes together.place on floured surface and pat and roll dough to a rectangle about 10"by 16" long. Fold long ends of dough into center and fold in half like a book. with smooth end on your left , roll in to another rectangle and fold again. turn dough as you did the first time ,and roll and fold a third time. place dough in freezer for about 30 mins . When ready to use, pre heat oven to 375°F
- combine currants with cinnamon and sugar. Roll out pastry to 1/4" thick brush with melted butter sprinkle currant mixture evenly press gently roll up jelly roll style, seal ends and place on tray seam side down. brush with egg. bake for 45-50 mins. until golden brown. remove sprinkle a little sugar on top cool then slice diagonally into 1 &1/2 " pieces place back on tray and return to oven for 5-10 mins. cool and enjoy
