Ingredients :
- eggs
- 3 large egg
- 2 tbsp margarine
- tilapia
- 4 oz tilapia
- 1 tbsp turmeric
- 2 tbsp margarine
- 1/4 tsp ground black pepper, fresh
- 1/4 tsp paprika
- 1 salt
- tomatoes
- 14 1/2 oz diced tomatoes
- 1/3 cup pickled jalapeƱo peppers
- 1 salt
- 1/4 tsp sweet basil
Method :
- In a pan Melt the margarine. beat the eggs, and add them to the margarine. Cook till golden in color. Set aside.
- Melt the margarine. Add the fish add most of the spices on top. Cook the fish 3 minutes 5 if its a thick filet. Turn the filet add the rest of the spices cook the same time as the first side.
- Remove set aside. In same pan as the fish was cooked add tomatoes, salt, and basil. Cook 2 minutes then add jalapeƱos. Simmer 7 minutes reduce the juices to thicken. Then let sit 3 minutes.
- On a plate make a circle with the tomatoes. Add eggs in the middle and fish on the side hope you enjoy.
