Ingredients :
- 2 pounds potatoes, peeled and quartered
- 1/2 cup Miracle Whip
- 8 ounces cream cheese, softened and cubed
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- butter
- paprika
Method :
- In a large pot bring to boil enough water to fully cover the potatoes.
- Add potatoes and cook until potatoes are tender.
- Drain.
- While mashing the potatoes add in the Miracle Whip, cream cheese, onion powder, salt and pepper. Mash until light a fluffy. (I use an electric mixer to make this easier.)
- Spoon into 1 1/2 quart casserole dish.
- Dot the top of the potatoes with slices of butter then sprinkle with paprika.
- Cover and chill overnight for best results. (You can bake now if you"d like)
- Bake uncovered at 350°F for 1 hour or until thoroughly heated.
- TO FREEZE:
- Prepare recipe above without baking.
- Wrap dish securely and freeze.
- When ready to serve, thaw and follow baking instructions above.
