Recipe Bitter, Sweet and Nutty Salad

Ingredients :

• salad:
• 7 oz bag butter lettuce and radicchio
• 1 c roasted corn kernels, cooled
• 4 oz steamed beets, cooled and chopped
• 1/4 c chopped fresh parsley
• 1/4 c chopped raw pecans
• 1/4 tsp salt
• 1/8 tsp pepper
• 1/8 tsp garlic powder
• sweet and tangy dressing:
• 2 T olive oil
• 2 T balsamic vinegar
• 1 T rice vinegar
• 1 T dijon mustard
• 1 tsp honey

Method :

1. In small bowl, whisk dressing ingredients.
2. In large bowl, combine salad ingredients and toss with dressing.
