Ingredients :
- 1 tbsp oil
- 1 cup quinoa
- 1 cup veggie broth
- 15 oz cooked black beans
- 14 oz tomatoes diced
- 1 cup corn
- 1/2 tsp cumin
- to taste salt and pepper
- 1 avocado diced
- Juice of 1 lime
Method :
- Saute garlic in oil over medium high heat for about a minute
- Stir in quinoa, broth, bean, tomatoes, corn, cumin, salt and pepper.Bring to a boil then reduce the heat and simmer until quinoa is cooked through, about 20 minutes
- Stir in avocado and lime juice
