
Ingredients :
- 2 english cucuber
- 1 large hot house tomato, chopped
- 1/4 cup red onion chopped
- 2 tbsp chopped english cucumber with the skins on
- 1/4 cup Feta cheese, crumbled
- 5 large kalamata olives pited and chopped
- 1 clove Garlic, finely chopped
- 1 tsp fresh chopped oregano
- 2 1/2 tbsp olive oil, extra virgin
- 1 1/2 tbsp fresh lemon juice
- Salt and fresh black pepper
- 5 whole kalamata olives
- 5 whole green olives
Method :
- In a large mixing bowl add, chopped tomato, onion, cucumber, feta and kalamata olives. Mix well.
- In another bowl add garlic, olive oil, lemon juice, oregano and salt and pepper. Whisk together then add to your mixture.
- Cut your two english cucumbers one inch wide. Take a melon baller and scoop out the insides. Make sure not to go through. Making a shot glass of sorts
- Next fill the cucumber cups with mixture and garnish with the remaining olives. Parsley is always good. Next drizzle olive oil over the plated food and serve chilled.
