Recipe Fish with a Pine Nut sauce

Ingredients :

  • 3/4 cup pine nuts toasted
  • 2 slices wholemeal bread
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 1 cup fish or chicken stock
  • 1 tablespoon chopped parsley
  • 1 tablespoon butter
  • Grind of one lemon cut into thin strips
  • 4 whitefish fillets

Method :
  1. Pine nut sauce: Place pine nuts, bread, garlic, lemon juice and stock into a food processor.
  2. Using the pulse action process to 30 seconds or until smooth.
  3. Transfer to small pan, stir in parsley and warm through.
  4. Thin the sauce with extra stock if necessary
  5. Heat butter and lemon strips in a medium pan, add the fish and cook on a medium heat 2 minutes on each side
  6. Serve the fish with a pine nut sauce and a green salad
