Ingredients :
- 6 medium-large sweet potatoes
- 8 tbs butter (divided)
- 2 apples, peeled, cored, and chopped
- 2/3 cup milk, heated
- 3 tbs brandy (optional)
- 1/4 cup brown sugar
- 1 tbs cinnamon
- 1/4 tsp salt
- 1/4 cup slivered or sliced almonds (optional)
Method :
- Scrub the sweet potatoes, cut in half and place in a large pot of boiling salted water, until fork tender, about 30 minutes. Drain, and allow to slightly cool, in order to peel.
- While potatoes are boiling, melt 2-3 tbs. butter in a large sauce pan over low-medium heat, and add the apples. Sauté with a dash of cinnamon, until they are very tender.
- Pre-heat oven to 350 degrees.
- Peel the potatoes and place in a large bowl. Mash them using a potato masher or use an electric mixer. Add the apples and continue to mash.
- Add the rest of the butter, heated milk, and brandy (optional) to the bowl. Blend well with a mixer. While mixing, add the sugar, and a dash of cinnamon, and salt to taste.
- Scoop this mixture into a well-buttered casserole dish, and bake for 25-30 minutes. Remove from oven and allow this to cool for a few minutes. Top with slivered almonds.
