Ingredients :
- 10 large eggs
- 3 potatoes
- dash garlic salt
- dash salt
- dash black pepper
- 1 packages bacon
- olive oil
- 1/2 packages colby jack cheese (optional)
Method :
- Preheat oven 350°
- Spray glass casserole dish with non stick spray and place the dish in the oven to warm up
- Put olive oil in a frying pan to preheat for the potatoes
- As oil preheats, wash potatoes.
- Chop washed potatoes into small cubes
- Place chopped potatoes in olive oil to fry and add some garlic salt to potatoes
- As potatoes fry, cook the entire package of bacon in separate pan
- Place cooked bacon on paper towel to absorb grease
- Once all bacon is cooked set aside to cool
- Once potatoes are fried place in the casserole dish and put back in the oven to continue to cook (potatoes should be soft and able to put fork in without trouble)
- Whisk eggs together in a bowl and add garlic salt, salt, and pepper
- Place cooked bacon on cutting board and chop into fine bits
- Add chopped bacon to the eggs and mix them together
- Pour the egg and bacon mixture into the casserole dish with the potatoes
- Cook in oven for 15-20 mins or until eggs are fluffy
- If you choose to use cheese, shred cheese and sprinkle it on top of the eggs 2 min before the cook time is up to melt
- Let cool for 5-8 min and ENJOY
