Ingredients :
- 1 lb boneless skinless chicken breasts, chopped to bite-size pieces
- 2 tsp olive oil
- 1/4 cup light corn syrup
- 1/4 cup soy sauce, reduced sodium
- 1/4 cup teriyaki sauce, reduced sodium
- 1/8 cup sriracha sauce
- 3 cloves garlic, minced
- to taste red pepper flakes (I use 1/2 tsp)
- 2 bell peppers, chopped
- 1 carrot, sliced
- 1 sweet onion, chopped
Method :
- Bring to a boil then reduce heat and simmer 20 minutes, until sauce is reduced to thick glaze.
- If you want to thicken sauce more, mix cornstarch and evaporated milk in equal parts. Stir into sauce and heat until thick and bubbly. This will add more Smartpoints to the dish though.
