Recipe Liver Paste

Ingredients :

  • 1/2 cup butter
  • 1 cup chopped onions
  • 1 pound chicken livers
  • 2 hard boiled egg yokes
  • 1 pinch salt
  • 1 pinch pepper
  • 1/8 teaspoon nutmeg
  • 1 teaspoon lemon juice
  • 2 tablespoons chopped parsley
  • 1 box wheat thins

Method :
  1. Melt 1/4 cup butter in large skillet
  2. Add onions and cook until transparent, stirring frequently.
  3. Remove onions and set aside for later
  4. Add remaining butter and chicken livers to skillet. Saute, stirring frequently until livers are tender (about 10-15 min), then cool slightly.
  5. Place onions, liver, egg yolks in food processor or blender and process until well blended into a pasty consistency. Add remaining ingredients and mix well.
  6. Spoon into a greased bowl for serving, cover tightly and chill.
