Ingredients :
- 1 cup chickpeas
- 1 spoon olive oil
- to taste Salt & pepper
- 1/2 onion
- Tomatoes
- 2-3 small carrots
- Dried oregano
- Juice of 1 lemon
- to taste Greek feta
- Fresh coriander
Method :
- Boil the chickpeas until smooth, add olive oil, salt & pepper, onion, tomatoes (cut into cubes), carrots and dried oregano, and let it cook for another 10 mins.
- When ready, remove from fire, add the fresh coriander and the juice of 1 lemon and serve. Optional greek feta on top, i always add feta as it is my absolutely favourite ingredient and adds extra salty flavour to every meal. Enjoy!
- Tip: add a lot of lemon juice, it gives the chickpeas another yummy yummy flavour, my grandma told me that and she"s absolutely right!
