Ingredients :
- 100 g fresh pineapple
- 3 Tbsp granulated sugar
- 100 ml unsweetened coconut milk
- 1 egg
- 2 tsp flour
Method :
- Preparations: Cut fresh pineapple into chunks. Grease a 6 inch pie plate with butter. Preheat oven to 180C (360F).
- Mix granulated sugar, coconut milk and egg together.
- Stir in sifted flour and mix well
- Place the pineapple in the pie plate and pour the mixture over top.
- Bake for about 30 minutes.
- Dust with confectioner"s sugar.
- Don"t forget the vanilla ice cream!
