Recipe Lamb with a mint and lemon dressing

Ingredients :

  • 8 lamb steaks roughly 225 g each
  • Grated rind and juice of one large lemon
  • 2 cloves garlic, peeled and crushed
  • 2 spring onions finely chopped
  • 2 cups finely chopped fresh mint leaves, plus an extra leaves the garnish
  • 4 tablespoons extra virgin olive oil, salt and black pepper to taste

Method :
  1. Make a marinade by mixing all the ingredients except that the lamb and seasoning to taste. Then place the lamb steaks into a shallow dish and cover with a marinade. Refrigerate overnight
  2. Grilled lamb under high heat until just cooked basting with the marinade occasionally during cooking. Turn once halfway through cooking
  3. Garnish with mint leaves.
