Ingredients :
- 8 lamb steaks roughly 225 g each
- Grated rind and juice of one large lemon
- 2 cloves garlic, peeled and crushed
- 2 spring onions finely chopped
- 2 cups finely chopped fresh mint leaves, plus an extra leaves the garnish
- 4 tablespoons extra virgin olive oil, salt and black pepper to taste
Method :
- Make a marinade by mixing all the ingredients except that the lamb and seasoning to taste. Then place the lamb steaks into a shallow dish and cover with a marinade. Refrigerate overnight
- Grilled lamb under high heat until just cooked basting with the marinade occasionally during cooking. Turn once halfway through cooking
- Garnish with mint leaves.
