Ingredients :
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 2 tsp salt
- 2 tsp dried rosemary
- 2 tsp dried thyme
- 1/4 tsp pepper
- 2 large baking potatoes
- 1 lb baby carrots
- 12 cloves garlic, minced
- 8 oz small white mushrooms
- 2-4 chicken breasts
Method :
- Preheat oven to 450 degrees.
- Combine lemon juice, olive oil, salt, rosemary, thyme, & pepper in a small bowl & mix well.
- Cut potatoes into chunks, peeling first, if desired. Combine potatoes, carrots, garlic, & mushrooms in large bowl.
- Add 2tbsp of lemon juice mixture & toss until everything is coated.
- Cook vegetables in oven for 30 minutes.
- Dip chicken brests in remaining lemon juice mixture & place chicken on top of vegetables. Pour any leftover lemon juice mixture over chicken.
- Reduce heat to 375 degrees.
- Bake for an additional 25 minutes.
- Let set for 5 minutes. Serve.
