
Ingredients :
- 1 Pepper (any colour)
- 75 g Goats cheese
- 50 g boiled rice
- 1 clove garlic
- 1/2 onion
- 1 tablespoon coriander
- 1/2 tin chopped tomatoes
- Salt and pepper
- Olive oil to fry and brush peppers
Method :
- Ingredients
- Cut Pepper in half, brush with olive oil and bake in the oven at 200 °C for 15 mins or until starting to colour
- While pepper is cooking chop the onion and garlic and fry with a little oil for 5 mins
- Add the tinned tomatoes to the onion and garlic and cook for another 5 mins on a medium heat
- Add the cooked boiled rice, coriander, pinch of salt and pepper and cook for a further 2 mins
- Spoon the mix into the pepper halves and top with the goats cheese. Cook for a further 15 mins at 200°c or until the cheese starts to colour and melt
