Ingredients :
- 1 whole pumpkin, cubed
- 2 potatoes, cubed
- 3 carrots, chopped
- 1 large onion, quartered
- 4 cloves garlic
- Vege or chicken stock
- 1 tsp onion powder
- 1 tsp chilli powder or flakes
- 1 tsp basil
- 1 can coconut cream
- Salt & pepper
- 1 chilli
- Spring onion/shallots
- grated parmesan
Method :
- Wash and pre all veges
- Put all veges, garlic, chilli powder and onion powder in a large pot with enough stock to just cover bring to the boil then reduce heat and leave to simmer for 30 mins
