Ingredients :
- Fresh salsa, store bought works well (If you buy jar add cilantro)
- 2 lb round beef or any boneless as whole beef
- 1 tbsp cumin
- 1 tbsp oregano
- salt and pepper
- 1 large white onion
- 1 bag sweet peppers, small bag mini peppers or one large of each color - red, yellow, orange (optional)
Method :
- Slice onion into strips. Slice peppers into strips. Remove seeds from small peppers
- Put beef in the crockpot. Top with onion, peppers, salsa.
- Add seasoning on top. Don"t stir. Fill no more than 3/4 full.
- Cook on high 6 to 8 hours.
- Pull beef out and shred with a fork.
- Freezes well.
- Add beef back with juices and onion pepper mix. Serve over rice.
