Ingredients :
- For the Skewers:
- 1.5 pounds pork loin, tenderloin or shoulder, sliced into thin rectangles (.25 inch by 1 inch by 2 inches, for 24 pieces)
- 1 shallot, minced
- 2 garlic cloves, minced
- 1 tbsp. grated ginger
- 3 tbsp. chopped lemon grass
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1.5 tsp turmeric
- 1/4 tsp cayenne pepper
- 1 tbsp. fish sauce
- 1 tbsp. lime juice
- 2 tsp soy sauce
- 1 tbsp. brown sugar
- 1/2 cup coconut milk
- Cilantro and basil leaves for garnish
- Store bought peanut sauce
Method :
- Prepare the skewers. Put pork in a mixing bowl. In a separate bowl, stir together shallot, garlic, ginger, lemon grass, cumin, coriander, turmeric, cayenne, fish sauce, lime juice, soy sauce, brown sugar and coconut milk.
- Pour over the meat and coat well. Marinate 30 mins to overnight.
- Soak 12 bamboo skewers in water.
- Grill, broil or on a stovetop grill for 3 mins on each side until cooked through and lightly browned.
- Transfer to a platter and garnish with cilantro and basil leaves. Serve with peanut sauce.
- Thread 2 slices of pork onto each skewer, keeping meat as flat as possible.
