Ingredients :
- 1 zucchini per person
- 10 large kale leaves, chopped
- 50 basil leaves
- 1 clove garlic
- 120 g pistachios
- 1 Tbsp nutritional yeast
- 60 ml olive oil
Method :
- Spiralize the zucchini, cut it into smaller strands if they are too long and place them in a bowl.
- Now make the pesto: in a food processor pulse all the ingredients until smooth, slowly adding the olive oil while pulsing.
- Toss the spiraled zucchini with the pesto, add some crushed pistachio on top and serve.
