Recipe Kale and Basil Zoodles

Ingredients :

  • 1 zucchini per person
  • 10 large kale leaves, chopped
  • 50 basil leaves
  • 1 clove garlic
  • 120 g pistachios
  • 1 Tbsp nutritional yeast
  • 60 ml olive oil

Method :
  1. Spiralize the zucchini, cut it into smaller strands if they are too long and place them in a bowl.
  2. Now make the pesto: in a food processor pulse all the ingredients until smooth, slowly adding the olive oil while pulsing.
  3. Toss the spiraled zucchini with the pesto, add some crushed pistachio on top and serve.
