Ingredients :
- 1 1/2 cups sugar
- 1 cup butter
- 4 eggs
- 2 cups flour
- 1/4 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 1 1/2 pound can cherry pie filling
- Confectionary sugar, sifted
Method :
- Preheat oven to 350 degrees F.
- Grease and flour a 15x8x2 inch pan.
- Beat sugar and butter until light and fluffy.
- Add eggs, one at a time, beating well after each.
- Add flour, salt, baking soda, and vanilla and mix well.
- Pour into prepared pan and smooth top with spatula.
- Spoon one tablespoon of pie filling on top of batter to make approximately 20 squares (about 4 spoonfuls across the shorter end of the pan and 5 spoonfuls down the longer end of the pan. Then fill it in.).
- Bake for 40 - 50 minutes, but start checking for doneness at 40 minutes with a toothpick.
- Cool pan on a wire rack.
- When cool, lightly cover with sifted confectionary sugar and cut into 20 squares.
