Ingredients :
- 10 potatoes
- 3 tbsp butter
- 1/2 cup cream or milk
- to taste salt
- 2 tbsp olive oil
- 1 large onion,finely chopped
- 3 garlic cloves
- 8 oz mushrooms, sliced
- 30 oz lentils cooked in their water
- 2 tbsp red wine
- 1 tbsp soy sauce
- 3 tsp Italian seasoning
- 1/2 tsp thyme
- 3 tbsp cornstarch
- 10 oz spinach
Method :
- Cook and mash the potatoes with butter, milk and salt
- Preheat oven to 400°F
- Saute the onion in the olive oil til translucent.
- Add garlic and mushrooms and cook til onion is golden
- Add lentils and their liquid and bring to a simmer. Stir in wine soy sauce and seasoning and cook for 5 min
- Add cornstarch
- Add spinach and cook til wilted then add to caserole dish. Top with mashed potatoes
- Bake 30 to 35 min then let stand 5 min before serving
