Recipe Ginger and Vanilla Peach Upside Down Cake

Ingredients :

  • PEACHES
  • 2 tbsp butter
  • 3/4 cup brown sugar
  • 1 inch peeled ginger sliced into thin coins
  • Salt
  • 1 vanilla bean sliced in half lengthwise, seeds scraped out or 1 tsp vanilla extract
  • 3 tbsp whiskey
  • 1 lb peaches sliced
  • CAKE
  • 8 tbsp butter
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp salt
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 tsp vanilla
  • 1/3 cup buttermilk
  • 1 1/2 tsp grated fresh ginger

Method :
  1. In a skillet over low heat cook peach ingredients together until the juice thickens, about 12 min
  2. Pour peaches into an 8 in baking dish.
  3. Preheat over to 350°F
  4. Melt 8 tbsp butter over low heat until caramel color. Strain into a mixer
  5. Combine dry ingredients in another bowl
  6. Beat butter sugar and Vanilla together.
  7. Add one egg at a time.then Alternate adding dry ingredients and buttermilk
  8. Add grated ginger and pour on top of the peach mixture. Bake for 30 min. While still warm invert onto a platter
