Ingredients :
- PEACHES
- 2 tbsp butter
- 3/4 cup brown sugar
- 1 inch peeled ginger sliced into thin coins
- Salt
- 1 vanilla bean sliced in half lengthwise, seeds scraped out or 1 tsp vanilla extract
- 3 tbsp whiskey
- 1 lb peaches sliced
- CAKE
- 8 tbsp butter
- 1 cup flour
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp ground ginger
- 1/4 tsp salt
- 3/4 cup brown sugar
- 2 eggs
- 1 tsp vanilla
- 1/3 cup buttermilk
- 1 1/2 tsp grated fresh ginger
Method :
- In a skillet over low heat cook peach ingredients together until the juice thickens, about 12 min
- Pour peaches into an 8 in baking dish.
- Preheat over to 350°F
- Melt 8 tbsp butter over low heat until caramel color. Strain into a mixer
- Combine dry ingredients in another bowl
- Beat butter sugar and Vanilla together.
- Add one egg at a time.then Alternate adding dry ingredients and buttermilk
- Add grated ginger and pour on top of the peach mixture. Bake for 30 min. While still warm invert onto a platter
